angel food pineapple cake | a pinterest win!

My Mom told me about this yummy cake-like treat after seeing it on Facebook.

I believe her exact words (at around 11:00 a.m.) were: “I made this cake this morning. It was so good your father and I just finished the pan.

Yup, sounds about right.

She gave me the recipe (simple). But I decided to check Pinterest for it anyway. As expected, it’s everywhere. Here. And here. And here. And so forth.

I picked up the ingredients. Literally. In one hand (1 box of angel food cake mix, 1 can of crushed pineapple). Sprayed my 9×13 with Pam, mixed them up (warning: don’t lick the spatula. Trust me on this one), dumped it in, baked at 35o for 30 minutes.

A very nice, light, sweet and tasty treat, in my opinion. Easy to have the stuff on hand for when you really NEED something or just want extra-special wife/mom points for making DESSERT along with dinner.

It reminds me of my always-beloved pineapple dump cake, but without all that pesky butter. Next time, I might try adding some cherry pie filling in with the pineapple. Hmmm…..

  • April - I can’t have pineapple, but I immediately wondered if it would work with cherry pie filling. May need to try that. 😉ReplyCancel

I have been making this cake since I learned of it in Weight Watchers years and years ago. When I am feeling daring, I add an icing – mix of cool whip free, powdered sugar and a bit of fat free cream cheese. Otherwise we eat it as is, YUMMY!!

And great for a hot Texas summer day!

  • Judy - try coconut on top b4 baking I did and they loved itReplyCancel
